Freshly Baked

After having gone apple picking this Fall, I realized that we were definitely not going to eat our way through the haul we brought back. What's a girl to do? Why make apple crisp of course! This is definitely one of my favourite desserts and it never hurts to have one ready in the freezer for a last minute needed treat.

I have tried several different recipes over the years but I think I have finally made enough modifications to call this one my own. Now don't panic, you don't have to be a pastry chef to make this yummy dessert. Most of the time I cheat a little by using pre-made pie crusts but please feel free to use your own pastry recipe if you're so inclined.

Ingredients:
  • 4-5 gala apples
  • 9" regular pie shell
  • 3/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 1/3 cup unsalted butter, softened
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
Preparation:
  1. Heat oven to 375o F. Place your pie shell in a pie dish of your choice.
  2. Throw your brown sugar, flour, oats, butter, cinnamon, and nutmeg into a big bowl. Use a pastry blender (or a fork in a pinch) to chop the mixture into crumble pieces.
  3. Gently stir the crumble mixture to ensure that all the ingredients are mixed. Be sure not to use an electric blender or over-stir in order to maintain your crumble consistency.
  4. Cut up apples into chucky wedge slices and spread half of them into your pie dish. Sprinkle some cinnamon all over the apples. Then add some of your crumble mixture on top of the first layer of apples.
  5. Place the remaining apples into the pie dish to make your second layer. Sprinkle some more cinnamon, followed by the remaining crumble mixture all over the top layer of apples.
  6. Pop it into the oven for about 40 - 45 minutes. The topping should be golden brown and the apples tender when pierced with a fork.

My favourite way to serve apple crisp is warm from the oven with vanilla ice cream. Yum! I had better go and get a slice before my husband eats it all up on me.
